Servings = 2-4 depending on the size of the chicken breasts
This recipe is fine for all stages of the program.
Ingredients:
- 2 chicken breasts – cubed into bite sized pieces
- 2-3 Tbsp sugar free teriyaki sauce
- 1 large garlic clove, minced
- 1 pinch red pepper flakes
- 2 bunches of baby bok choy, chopped with the tough bottom section removed
- 1 tsp. low-sodium soy sauce
- 1/2 cup low sodium chicken broth
- 2 medium zucchinis for making zucchini noodles
Directions:
- Preheat the oven to 375°F.
- Place the chicken on a baking tray and pour teriyaki sauce over it.
- Mix together so that the chicken is covered and let it marinate for about 15 -20 min.
- Bake for 15-17 minutes or until chicken is cooked through then remove from oven.
- Place a large frying pan over medium heat and coat with cooking spray.
- Add garlic and chili pepper to the pan
- Cook for about 30 seconds and then add the chopped bok choy. Cook while stirring for about 2-3 minutes until the bok choy is wilted and starting to get tender.
- Add soy sauce and chicken broth to pan.
- Reduce heat and simmer for about 3-5 minutes or until most of the liquid is gone.
- Then add the spiralized zucchini noodles. Toss to combine and cook for 2-3 minutes stirring frequently (do not overcook – the zucchini noodles can go from being a little crisp to mushy very quickly)
- Add the cooked chicken and stir to combine all ingredients together.
