Servings – depends on how much you make and the add ins you choose to use.
This recipe is fine for all stages of the program.
Ingredients:
- 2 cups spinach, finely cut
- 2 cups cabbage, finely sliced
- 2 cups cauliflower, cut in small florets
- 2 cups green beans, finely cut
- 3-4 garlic cloves, finely cut
- small piece of ginger, finely chopped (optional)
- 2 cups mushrooms, finely cut
- 1 cup green onions, finely chopped
- 2 bouillon cubes of low salt – chicken or vegetable bouillon
- low salt and black pepper
- 1 Tbsp. Canola oil
- 6-7 cups water or stock
Directions:
- In a stock pot/ pressure cooker/ slow cooker add oil and sauté ginger and garlic till brown.
- Add everything and cook for about 30 minutes on medium heat.
To add protein, you could make some small turkey meatballs, cook them and add them to your soup. (use ground meat, add some garlic powder, salt and pepper, onion powder, roll into 1 inch sized balls, fry in a pan until cooked then add to your soup) You could also add a package of konjac rice to the soup once cooked. (drain, rinse with water a couple of times and add to the soup and cook for a few more minutes to heat the rice)
