Roasted Cabbage Steaks

Servings – 4

This recipe is fine for all stages of the program.

Ingredients:

  • 1 head green cabbage, cut into 1 inch thick slices
  • 1½ Tbsp. olive oil
  • 2 to 3 large garlic cloves or garlic powder
  • Pinch and freshly ground black pepper
  • olive oil or cooking spray

Directions:

  1. Preheat oven to 400°F and spray a baking sheet with non-stick cooking spray.
  2. Pull outer leaves off cabbage, cut cabbage from top to bottom (bottom being root) into 1 inch thick slices.
  3. Rub both sides of cabbage with smashed garlic or use a light sprinkle of garlic powder. (if using garlic powder, you’re going to want to add the olive oil from the next step first)
  4. Use a pastry brush to evenly spread the olive oil over both sides of the cabbage slices.
  5. Sprinkle with a pinch of salt and pepper.
  6. Roast in the oven for 30 minutes.
  7. Carefully flip the cabbage steaks and roast for an additional 30 minutes until edges are brown and crispy.
  8. Serve hot.

These are good without anything except a little salt and pepper as well, served with a splash of cider vinegar.
