Servings – 2 balls = 1 serving.
This recipe is fine for continued and maintenance stages of the program.
Ingredients:
- 1 ½ cups ground almonds ( you can purchase this in bulk or, if you have the time and inclination, get whole raw almonds and make your own in a food processor)
- 1/4 cup sweetener of your choice – more or less depending on your taste.
- 1 Tbsp. ground cinnamon (you could substitute cocoa as well to make them chocolate flavoured instead)
- 2 egg whites
- oil for greasing pan or cooking spray
Directions:
- Preheat oven to 350°F.
- Oil a large baking sheet or line with parchment paper.
- Mix together the ground almonds, sweetener and cinnamon.
- Beat the egg whites until they begin to stiffen and fold into almond mixture to make a fairly firm mixture.
- Wet your hands with cold water and roll mixture into balls.
- Place these on a baking sheet lightly sprayed with cooking spray. (Pressing them lightly with a fork, makes them more like a cookie than a ball).
- Bake for about 15 minutes; so they remain slightly soft inside….too much cooking will make them hard and tough.
- Remove balls from baking sheet and allow to cool on a rack.
NOTE: This recipe makes 15 balls. You can make these smaller to get more than 15. They also freeze well.
