Whole Flaxseed Crackers

This recipe is fine for all stages of the program.

Ingredients:

  • 1 cup flax seeds (whole, not ground)
  • 1 cup water
  • 2 Tbsp. low sodium soy sauce
  • ¼ tsp. garlic powder
  • ¼ tsp. curry powder
  • salt and pepper to taste

You could make these with any type of seasoning you prefer such as onion and garlic, rosemary and garlic, Italian seasoning, oregano etc.

Directions:

  1. Place the flaxseeds and water in a medium bowl and mix. Let sit for 1-1/2 hours. You will notice that the mixture will thicken.
  2. Preheat your oven to 300°F.
  3. Line a rimmed baking sheet with parchment paper or a reusable silicone liner.
  4. Mix  the soy sauce, garlic and curry powder, salt and pepper into the flax mixture.
  5. Pour mixture onto baking sheet, spread into a large rectangle — about 1/8-inch thick with a spatula. The thinner the crispier.
  6. Bake for 40 minutes, then check for firmness. If it’s firm, flip and continue baking for another 40 minutes or so. If not, keep baking. Keep checking until the whole thing is crispy, but not burned. 
  7. Cut your large cracker into bite-sized squares.

Remember to CHEW! Your body is unable to digest whole flax seeds so chewing is important!
