This recipe is fine for all stages of the program.

- 1 egg, beaten
- ½ tsp. vanilla
- 1 Tbsp. cream (optional, you could use 1 tbsp almond milk as an alternative)
- 1 Tbsp. cocoa powder
- 2 Tbsp. sweetener of your choice
- ¼ tsp. baking powder

- Add the sweetener and cocoa powder to a small bowl.
- Add the cream/almond milk, egg and vanilla and whisk until there are no lumps.
- Sprinkle the baking powder on top and quickly mix together.
- Pour into a large mug or two smaller mugs and microwave (one at a time if making 2 mugs) for 40 to 60 seconds.
- It will rise quite high and then settle again.
- Should be moist but not runny.
NOTE: For most microwaves, it will take about 60 seconds but you may need to play with the time depending on the strength of your microwave.
SIDE NOTE: you can make these in small bowls instead and then place the “cake” on a plate with a small dollop of sugar-free whipped cream ( cream whipped with sweetener instead of sugar) and a mint leaf to dress it up for company.
