Cauliflower Pizza Crust

Servings – 2-3

This recipe is fine for all stages of the program.

  • ½ cauliflower head
  • 1 whole egg ( or you can use 2 whole eggs and omit the extra egg whites)
  • 2 egg whites
  • basil for taste (you can used dried or fresh basil finely chopped)
  • 1/2 cup shredded skim milk mozzarella

  1. Preheat oven to 450°F.
  2. Use food processor, blender, or hand grater to grate the cauliflower into a crumb-like texture.
  3. Microwave the cauliflower for 6-8 minutes (add a few tablespoons of water to the dish you are using).  Alternately, you could steam the cauliflower over boiling water until it is soft.
  4. Put them in a kitchen towel or cheese clothe and squeeze all the water out.
  5. Mix it with the eggs (2 whites and 1 whole or 2 whole eggs if you prefer).
  6. Add basil to the mix for flavour.  You can also add other herbs and spices like a little garlic powder, onion powder, oregano or Italian seasoning (about 1/4 tsp each is a good combo)
  7. Add the cheese and combine well with the rest of the ingredients.
  8. Spread onto a baking sheet or pizza pan lined with parchment paper – about 1/4 inch thick.  If you spread it onto parchment paper, you can flip it midway through the baking process to brown both sides and it makes it easier to cut and serve the pizza at the end.
  9. Bake it first by itself (no toppings) at 450°F for about 18 min (check the middle if you need to add more time for it to bake – the edges should be browning a little and the middle should be firm) If you can, you might try flipping it at the 10-15 min point and browning the other side a little.
  10. Add your favourite toppings and broil it for 2-3 min.

Topping suggestions – thinly sliced mushrooms, onions, green pepper, ground meat, hot peppers.
