Green Bean Bundles

Servings – 4-6

This recipe is fine for all stages of the program

  • 1 lb. fresh whole green beans ( 1 large package )
  • 3 to 4 slices low sodium turkey bacon, cut into thirds and partially cooked (you need to be able to wrap it around the beans so it has to not be crispy)
  • salt and pepper to taste

  1. Preheat the oven to 325ºF.
  2. Combine green beans and enough water to cover in a large saucepan.
  3. Bring to a boil. Boil for 3 minutes; drain.
  4. Wrap 5 or 6 green beans with a piece of bacon and secure with a toothpick.
  5. Repeat procedure with the remaining green beans and bacon.
  6. Arrange bundles in a 13-inch × 9-inch baking dish.
  7. Sprinkle with salt and pepper to taste
  8. Roast bundles in oven for a further 7-10 minutes (again, this is going to be dependent on how crunchy or cooked you prefer your vegetables)

If you cook your bacon too crispy, don’t despair! Keep cooking it until it is crispy then crumble it and sprinkle it on the bean before putting them in the oven…it’s the same dish but then you can call it “deconstructed bacon bean bundles” .
