This recipe is fine for all stages of the program
Ingredients:
- 2 Tbsp. olive oil (divided)
- 1 Tbsp. cajun seasoning
- ¾ lb. turkey sausage, cut into rounds
- 1 lb. boneless chicken breast, cut into 1″ pieces
- 2 green onions
- 1 pepper, diced
- 3 stalks of celery, diced
- 1 Tbsp. minced garlic
- ½ tsp. red pepper flakes
- ½ can of tomato paste
- ½ tsp. black pepper
- ½ tsp. Tabasco sauce
- 2 tsp. Worcestershire sauce
- 2 cups low sodium chicken broth
- 1½ cups riced cauliflower
Directions:
- Keep chicken and sausage separate, and toss in ½ Tbsp. cajun spice in each.
- Heat 1 Tbsp. oil and cook sausage, remove with slotted spoon.
- Heat second Tbsp. oil and cook chicken, remove with slotted spoon.
- Saute bell pepper, celery, garlic and green union until tender.
- Stir in spices; Worcestershire and Tabasco sauce, then add the chicken, sausage and riced cauliflower.
- Saute for 10 minutes.
- Stir in chicken broth and tomato paste.
- Bring to a boil, reduce heat and simmer for 25-30 minutes or until liquid is slightly reduced.
