Teriyaki Chicken, Bok Choy and Zucchini Noodles

Servings = 2-4 depending on the size of the chicken breasts

This recipe is fine for all stages of the program.

Ingredients:

  • 2 chicken breasts – cubed into bite sized pieces
  • 2-3 Tbsp sugar free teriyaki sauce
  • 1 large garlic clove, minced
  • 1 pinch red pepper flakes
  • 2 bunches of baby bok choy, chopped with the tough bottom section removed
  • 1 tsp. low-sodium soy sauce
  • 1/2 cup low sodium chicken broth
  • 2 medium zucchinis for making zucchini noodles

Directions:

  1. Preheat the oven to 375°F.
  2. Place the chicken on a baking tray and pour teriyaki sauce over it.
  3. Mix together so that the chicken is covered and let it marinate for about 15 -20 min.
  4. Bake for 15-17 minutes or until chicken is cooked through then remove from oven.
  5. Place a large frying pan over medium heat and coat with cooking spray.
  6. Add garlic and chili pepper to the pan
  7. Cook for about 30 seconds and then add the chopped bok choy.  Cook while stirring for about 2-3 minutes until the bok choy is wilted and starting to get tender.
  8. Add soy sauce and chicken broth to pan.
  9. Reduce heat and simmer for about 3-5 minutes or until most of the liquid is gone.
  10. Then add the spiralized zucchini noodles. Toss to combine and cook for 2-3 minutes stirring frequently (do not overcook – the zucchini noodles can go from being a little crisp to mushy very quickly)
  11. Add the cooked chicken and stir to combine all ingredients together.
