Slow Cooker Ribs

Servings – 4

This recipe is fine for all stages of the program.

Ingredients:

  • 1 tsp. paprika
  • 1 tsp. dry mustard
  • ¼ tsp. cayenne pepper
  • ½ tsp. coarse black pepper, divided
  • 2 racks pork ribs (about 1.5 kg)
  • 4 green onions, sliced
  • ¼ cup sugar-free BBQ sauce

Directions:

  1. Combine paprika, mustard, salt, cayenne and 1/4 tsp. pepper in a small bowl.
  2. Cut rib racks in half and sprinkle spice mixture all over.
  3. Place racks in the slow cooker with the meatiest sections on the bottom.
  4. Sprinkle green onions over the top. Cover.
  5. Cook on low for 6 hrs. Meat should be tender enough to pull apart with a fork.
  6. Preheat broiler to high. Line a baking sheet with foil. Transfer ribs to baking sheet
  7. Brush ribs with BBQ sauce before broiling
  8. Sprinkle with remaining 1/4 tsp. pepper. (optional)
  9. Broil for 4 minutes or until sauce is bubbling and caramelized.
