Servings – depends on how many you make. 2 eggs = 1 serving
This recipe is fine for all stages of the program.
Ingredients:
- 12 large eggs – hard boiled
- 1/4 cup low fat mayo
- ½ tsp. onion powder
- ½ tsp. garlic powder
- ½ tsp. parsley
- ½ tsp. salt
- pinch of pepper
- paprika for garnish
Directions:
- Place eggs in a large pot and completely submerge in water.
- Bring the water to a boil, then cover pot and remove from heat.
- Allow the eggs to sit in the hot water for 15 minutes, then immediately transfer them to ice water and soak for another half hour or until completely cooled.
- Crack and peel your eggs.
- Slice them in half lengthwise and carefully remove the yolks (place the yolks in a bowl big enough to mix with the dressing)
- Mix together your egg yolks (use a fork to mash them as finely as you are able), mayo, onion powder, garlic powder, parsley, salt and white pepper.
- Pipe or spoon the egg filling back into the cavities of the hard-boiled egg white.
- Sprinkle the tops of your devilled eggs with paprika and transfer to a serving plate!
You could also finely slice a dill pickle and add a slice to each egg to serve or serve with a tiny sprig of fresh dill
