This recipe is fine for all stages of the program;
Ingredients:
- 1 bag premade broccoli slaw (or you could find a use for the broccoli stalks if you have used broccoli florets in another recipe – just put them through the grater on a food processor)
- 1 can chunk chicken (Costco brand is actually pretty good) or you could use 1-2 cups precooked chopped chicken
- 1 pkg. low carb noodles
- 2 Tbsp. olive oil
- ¼ cup low sodium chicken broth
- 1 tsp. Mrs. Dash
- pinch salt to taste
- pinch pepper to taste
- juice of 1/2 lemon in a pot of boiling water for noodles
Directions:
- Sauté the broccoli in olive oil in a frying pan over medium – high heat.
- Add Mrs. Dash seasoning, salt and pepper.
- Add chicken broth.
- Dice chicken and add to mixture.
- Cook for 5 minutes.
- Rinse noodles, add to a pot of boiling water with the lemon juice (the noodles need the acid for cooking)
- Boil noodles in lemon water for 5 minutes.
- Drain and cut noodles into bite sized pieces (the easiest way to do this is to drain them well, lay them out on a cutting board and roughly chop them with a large knife)
- Add noodles to the broccoli mixture, cook over low heat for an additional 5 minutes, stir and serve.
This is awesome served with a dash of hot sauce of your choice.
