This recipe is fine for all stages of the program.
Ingredients:
- approx. 1 lb. lean ground chicken
- Large handful of green beans, chopped
- 1 green pepper, chopped
- ½ medium cauliflower, cut into small florets
- fresh ginger – 1 small piece cut finely or grated (about 1 inch piece)
- garlic 3-4 cloves, minced
- 1 Tbsp. olive oil
- cilantro – a small bunch, finely cut (optional, some people are genetically predisposed in a way that cilantro tastes like soap…)
- salt to taste
- black pepper
Directions:
- Spray a large pan or wok with cooking spray or use 1 tbsp olive oil, add ginger and garlic and sauté lightly for a few minutes
- Add ground chicken and cook about 20 minutes on medium heat until lightly browned and fully cooked.
- Add cut veggies and cook about 5 – 10 minutes. (the time will depend on how crunchy you like your vegetables)
- Add cilantro, salt and pepper to taste. Serve and Enjoy!
Chopped cabbage and other vegetables can be added or substituted depending on what you happen to have on hand.
