Servings – 2 – you can easily double this recipe to make enough for the whole family.
This recipe is fine for all stages of the program.

- 1/2 head of cauliflower, broken into bite sized pieces.
- 4-5 green bell peppers, cut in squares
- ¼ tsp. lime juice
- 1/4 tsp sweetener (optional)
- salt to taste
- 1 tsp. oil, 1 Tbsp. coriander seeds, 2 Tbsp. sesame seeds, 4-5 dry red chilis, 1 tbsp mustard seeds
- cilantro leaves to garnish before serving

- Heat the coriander, sesame seeds, red chilis and mustard seeds with the oil in a pan to toast them. Once cooled you can crush these together into a paste. Alternatively you could heat them without the oil either on the stove or baked in the oven at 375 for about 10 min, pulverize them in a coffee grinder then add the oil to make a paste.
- Add peanuts, spice mix and cauliflower to a frying pan with a sprinkle of salt.
- Fry for 2-3 minutes, close pan with lid and cook till the cauliflowers are half cooked.
- Add bell peppers and stir until everything is coated with spices.
- Add in 1 cup of water, cover the pan and cook until the bell peppers are cooked and bright green.
- Adjust salt, add red pepper powder to taste, if required.
- Garnish with cilantro leaves and a drizzle of lime juice.
Serve with protein of your choice and konjac noodles or rice.
