- 1 large can black beans (drained and rinsed)
- 1 container low sodium broth of your choice.
- 1/4 tsp sweetener of your choice (optional)
- ¼ tsp. each of cumin, coriander, red chili powder, yellow turmeric powder
- 1 bunch green onions, chopped
- 1 tsp. cilantro, chopped
- ¼ tsp. garlic powder (or use fresh garlic 1-2 cloves)
- 1 Tbsp. fresh ginger, shredded
- ¼ tsp. lemon juice
- 1/4 lb (about 100 g) firm tofu cut into small square chunks, pan roasted with olive oil (will get a nice golden brown colour AND / OR 1/2 lb ground meat of your choice browned in frying pan and excess fat drained, cut into small square chunks, pan roasted with olive oil (will get a nice golden brown colour)
- handful of green beans – about 1-2 cups chopped
- shredded cabbage 1-2 cups chopped
- 1 Tbsp. low sugar ketchup

- Start a wide and deep heavy pot. (basically find the biggest pot you have in your kitchen)
- On low heat, sauté all the spices in a tablespoon of olive oil.
- Add black beans and veggies, cooked meat / tofu and container of broth.
- Cook on low heat until vegetables are cooked to your liking (some people like their veggies a little crunchy so keep testing until they reach a firmness that you like)
- Stir in green onion and cilantro after cooking before serving.
Great served with a side green salad.
