Garlic-Lime Tilapia

Servings – 2

This recipe is fine for all stages of the program.

Ingredients:

  • 2 cloves of garlic – minced
  • Juice of 3 limes
  • 2 Tbsp. Carbquik
  • 2 tilapia loins
  • spray of your favorite high-heat cooking oil (such as avocado oil)

Directions:

  1. Using a microplane, grate garlic into a large bowl or baking dish (a bowl big enough to fit the fish).
  2. Squeeze juice of two limes into garlic and mix together to make a marinade for the fish.
  3. Marinate tilapia in the garlic-lime mix for 5 minutes (any more and the citrus will end up cooking the fish like ceviche and will make it a weird crumbly texture when it’s done).
  4. In a small sifter or strainer, sift the Carbquik lightly over the fish (both sides) and set on clean, dry plate.
  5. In a large, oven-safe pan, warm oil (it should be warm enough that you can only leave your hand over the pan for a few seconds) and carefully place ‘breaded’ fish.
  6. Let the bottom crisp up then gently flip over to create crust on both sides.
  7. Finish cooking it in the oven on low broil for 8 minutes or until opaque.
  8. Remove from oven and squeeze with remaining lime.

Great with a side of green veggies and some mashed cauliflower.
