Broccoli Chicken Slaw

Servings – 2-3

This recipe is fine for all stages of the program;

Ingredients:

  • 1 bag premade broccoli slaw (or you could find a use for the broccoli stalks if you have used broccoli florets in another recipe – just put them through the grater on a food processor)
  • 1 can chunk chicken (Costco brand is actually pretty good) or you could use 1-2 cups precooked chopped chicken
  • 1 pkg. low carb noodles
  • 2 Tbsp. olive oil
  • ¼ cup low sodium chicken broth
  • 1 tsp. Mrs. Dash
  • pinch salt to taste
  • pinch pepper to taste
  • juice of 1/2 lemon in a pot of boiling water for noodles

Directions:

  1. Sauté the broccoli in olive oil in a frying pan over medium – high heat.
  2. Add Mrs. Dash seasoning, salt and pepper.
  3. Add chicken broth.
  4. Dice chicken and add to mixture.
  5. Cook for 5 minutes.
  6. Rinse noodles, add to a pot of boiling water with the lemon juice (the noodles need the acid for cooking)
  7. Boil noodles in lemon water for 5 minutes.
  8. Drain and cut noodles into bite sized pieces (the easiest way to do this is to drain them well, lay them out on a cutting board and roughly chop them with a large knife)
  9. Add noodles to the broccoli mixture, cook over low heat for an additional 5 minutes, stir and serve.

This is awesome served with a dash of hot sauce of your choice.
