Devilled Eggs

Servings – depends on how many you make. 2 eggs = 1 serving

This recipe is fine for all stages of the program.

Ingredients:

  • 12 large eggs – hard boiled
  • 1/4 cup low fat mayo
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • ½ tsp. parsley
  • ½ tsp. salt
  • pinch of pepper
  • paprika for garnish

Directions:

  1. Place eggs in a large pot and completely submerge in water.
  2. Bring the water to a boil, then cover pot and remove from heat.
  3. Allow the eggs to sit in the hot water for 15 minutes, then immediately transfer them to ice water and soak for another half hour or until completely cooled.
  4. Crack and peel your eggs.
  5. Slice them in half lengthwise and carefully remove the yolks (place the yolks in a bowl big enough to mix with the dressing)
  6. Mix together your egg yolks (use a fork to mash them as finely as you are able), mayo, onion powder, garlic powder, parsley, salt and white pepper.
  7. Pipe or spoon the egg filling back into the cavities of the hard-boiled egg white.
  8. Sprinkle the tops of your devilled eggs with paprika and transfer to a serving plate!

You could also finely slice a dill pickle and add a slice to each egg to serve or serve with a tiny sprig of fresh dill
