Chicken Fajitas

Servings – depends on how many chicken breasts you choose to cook.  Allow 1 breast for each person you need to feed.

This recipe is fine for all stages of the program.

Ingredients:

For the marinade for 1 piece of chicken you will need:

  • 2 tbsp Worcestershire sauce
  • pinch of salt
  • 1 tbsp lemon juice
  • pinch of each –  cumin, garlic powder, onion powder and chili powder.

For the rest of the recipe:

  • green or coloured peppers depending on which stage of the program you happen to be following and the amount will depend on how much peppers you want with your chicken.  As a guide, you could start with 1/2 of a large bell pepper per chicken breast to start and then modify as you see fit.  (if you are NOT in the accelerated stage of the program, you could also add some thinly sliced onion to the peppers)
  • low carb tortillas (these can be found online and freeze well so don’t worry about purchasing a large package of them)
  • 1- 2 green onions per chicken breast being cooked.
  • chicken breasts (1 per person)
  • skim milk mozzarella cheese, shredded (2 tbsp per serving)

Directions:

  1. Prepare the ingredients for the marinade.
  2. Cut chicken into bite sized cubes or thin slices, whichever you prefer.  Put in a bowl with the marinade mixture and let sit for a minimum of 30 min in the refrigerator. (you can prepare this and leave it in the fridge for a few hours if you need to do so)
  3. While your chicken is marinating, finely chop the green onion & slice the peppers into thin strips..
  4. Add canola oil in a pan or spray a pan with cooking spray and fry the chicken until it is lightly browned. (you will want to have a little of the marinade in the pan as well but don’t use all of it at once.  Add a little at a time if the chicken starts to look a little dry as you are cooking)
  5. Add the veggies and continue to cook until they get to the desired tenderness (don’t let them go mushy though…they should still have a little firmness to them)
  6. once cooked you can sprinkle with the cheese and then cover the pan to allow the cheese to melt on top.
  7. Sprinkle with a little chopped cilantro, fat free sour cream and a little salsa to serve on its own or with a low carb tortilla.
