South West Style Stuffed Peppers

Servings – 1 pepper per serving – 4 servings for this recipe.

This recipe is NOT for the accelerated / initial stage of the program unless you use green peppers and use a smaller amount of salsa.

Ingredients:

  • 1 bunch green onion, chopped (or regular onion)
  • 2 stalks celery finely diced
  • 1 lb lean ground beef
  • 1 package low sodium taco seasoning
  • chilli powder to taste
  • 1 cup tomato salsa
  • 1 package miracle / konjac rice (this is optional if you want to make the filling go a little further)
  • 4 green peppers or coloured peppers, cleaned and tops removed
  • skim milk mozzarella – about 2 tbsp per pepper being made
  • fat free sour cream to serve.

Directions:

  1. Saute chopped onion / green onion and diced celery.
  2. Add ground beef and brown.
  3. Add the taco seasoning & chili powder.
  4. Then add salsa.
  5. Fill 4 green peppers and bake at 350°F  for 45 minutes.
  6. Garnish with grated shredded skim milk cheese and sour cream.
