1 Serving = 4 to 6 oz of flank steak
This recipe is fine for all stages of the program
Ingredients:
- 1 large flank steak
- asparagus, spinach, zucchini, green beans, green cabbage
- mushrooms
- 1 bunch green onions
- green bell pepper
- green chili pepper
- 2-3 Tbs olive oil
- 1 cup of low sodium beef broth
- other spices as preferred
- 2 Tbs dijon mustard
- juice of 2 limes
Directions:
- Season the flank steak with the favourite spices, dijon mustard & lime juice. Marinate 2 to 4 hours.
- Remove the steak from the marinade and hammer it with a meat tenderizer.
- Mix the different vegetables after cutting into small pieces (asparagus, spinach, zucchini, green beans, green cabbage, mushrooms, green onions bunch, chia seeds, green bell pepper, green chili pepper)
- Put the mixed vegetables in the middle of the flank steak and roll it, tying it into a roll with butcher twine.
- Place the rolled steak into the slow cooker and place the left over vegetables around it.
- Add the olive oil and broth to the slow cooker.
- Turn the slow cooker on low and cook for 4-5 hours.
