This recipe is fine for all stages of the program
Ingredients:
- 500 g (1 lb) raw salmon fillet, skin removed, finely chopped
- 3 cups fresh spinach, coarsely chopped
- 3 green onions, finely chopped
- 1-inch piece fresh ginger, peeled, finely chopped or grated
- ¼ tsp. ground black pepper
- 1 large egg – beaten
- 1 Tbsp. low sodium soy sauce
- Olive or canola oil cooking spray
- 2 Tbsp. pickled ginger (optional)
Directions:
- Preheat grill or broiler on high or use a frying pan lightly coated with cooking spray
- Combine raw salmon, spinach, green onions, ginger, and pepper in a large bowl; mix well.
- Combine egg white and soy sauce in a small bowl; whisk to blend.
- Add egg and soy sauce to salmon mixture; mix well.
- Form into four patties, each about ½-inch thick.
- Lightly coat grill or broiler pan with cooking spray, grill or broil patties, carefully turning once at about 3-4 minutes. Cooke for a full 6-7 minutes or until golden brown and cooked through.
- Serve each patty topped with 1½ tsp. pickled ginger and a tbsp of low fat mayo aoili (you can make this with a mixture of mayo and hot sauce or curry or garlic powder etc depending on what you choose to serve this with – get creative!)
