Servings – 1 pepper per serving – 4 servings for this recipe.
This recipe is NOT for the accelerated / initial stage of the program unless you use green peppers and use a smaller amount of salsa.
Ingredients:
- 1 bunch green onion, chopped (or regular onion)
- 2 stalks celery finely diced
- 1 lb lean ground beef
- 1 package low sodium taco seasoning
- chilli powder to taste
- 1 cup tomato salsa
- 1 package miracle / konjac rice (this is optional if you want to make the filling go a little further)
- 4 green peppers or coloured peppers, cleaned and tops removed
- skim milk mozzarella – about 2 tbsp per pepper being made
- fat free sour cream to serve.
Directions:
- Saute chopped onion / green onion and diced celery.
- Add ground beef and brown.
- Add the taco seasoning & chili powder.
- Then add salsa.
- Fill 4 green peppers and bake at 350°F for 45 minutes.
- Garnish with grated shredded skim milk cheese and sour cream.
