This recipe is fine for all stages of the program
Ingredients:
- 1 lb. extra lean ground beef
- 1 bunch green onion chopped (reserve a few very finely chopped to add as garnish at the end if desired for serving)
- ¼ cup low carb bread crumbs (let a low carb bread of your choice get really dry or toast it until really dry then grind to crumbs in a food processor)
- ½ tsp. dried sage leaves
- ½ tsp. salt
- 1 egg
- 1 large cauliflower to make 3 cups mashed cauliflower (see below cooking directions)
- 1 cup (4 oz.) shredded low fat / skim milk mozzarella
- ¼ cup chopped fresh tomato (not for the initial stage of the program unless you monitor serving size based on how much tomato you choose to add)
- 4-6 slices low sodium turkey bacon, chopped and cooked for garnish to serve (optional)
Directions:
- Heat oven to 350°F.
- In large bowl mix beef, green onion, bread crumbs, sage, salt and egg until well blended.
- Press in bottom of ungreased 8-inch square (2-quart) glass baking dish.
- Cut the cauliflower into florets and put in a large pot to boil. Boil on high for about 15 minutes or until well done.
- Remove from heat and drain well in a colander.
- Once the cauliflower has completely drained, add 1 Tbsp. of light / low fat cream cheese, salt and pepper to taste and mash until smooth with a potato masher.
- Spread mashed cauliflower evenly over top.
- Sprinkle evenly with cheese.
- Bake uncovered about 50 minutes.
- Sprinkle with bacon, finely chopped tomato and green onion to serve.
Serve with a side salad or green vegetable of your choice.
This can be made in a number of different ways depending on the spice you choose to use. Garlic and onion, dried mustard, tarragon etc are all ways you could change this recipe to make it more to your liking.
