- 2 – 3 lb pork roast – cooked and pulled or chopped
- 1 cup chicken broth
- sugar-free BBQ sauce
- 1 large cauliflower (mashed)
- 1 tbsp of low fat / fat free cream cheese
- 1 tbsp low fat / fat free sour cream
- ½ tsp pepper
- chives
- garlic to taste
Directions:
Preheat oven to 325 degrees
Season pork roast with salt and pepper. Place in roasting pan with 1 cup of chicken broth and cover. Roast until the pork is pull apart tender (approx. 3-4 hrs).
Remove the pork from the oven and pull apart using a fork, making shreds of pork Add enough BBQ sauce to coat the pork and warm for an additional 40 minutes.
Meanwhile make your mashed cauliflower (steam until tender and add low fat cream cheese, low fat sour cream, pepper, chives, garlic and then mash).
To make the parfait, use large or tall plastic cups that are OK with warm temperatures. Place a small layer of pork in the bottom, top with a layer of cauliflower mash, repeat until the cup is full (usually a couple of layers of each). You could also serve this by laying out a “bed” of the mashed cauliflower on a plate, layering pulled pork on top of it and then adding a few spears of something like grilled asparagus for a more upscale dinner presentation.
Done! Serve with side salad or choice of green vegetable.
